Pineapple and Papaya Salad with Habanero Vinaigrette

  • For Vinaigrette:
  • 3 Tbsp. Zack's Habanero Pepper Jelly
  • 2 tsp. Favorite fresh herbs
  • Salt and pepper to taste
  • 6 Tbsp. Olive oil
  • For Salad:
  • As desired Mixed greens
  • As desired Papaya, sliced fresh
  • As desired Pineapple, sliced fresh
  • 1 Red onion, sliced
  • 1 package Goat cheese
  • 1 package Breadcrumbs, unseasoned
  • 1 Egg
  • Salt and pepper to taste


  1. Whisk all vinaigrette ingredients except olive oil together in mixing bowl. While whisking, slowly drizzle oil to form an emulsion.
  2. Dress field greens with vinaigrette. Roll goat cheese with hands into 1/2 inch diameter balls. Season breadcrumbs with salt and pepper. Coat goat cheese balls with breadcrumbs. Dip coated cheese balls in egg wash (beaten egg and water) and coat second time with breadcrumbs.
  3. Deep fry goat cheese ball in deep fryer until golden brown. Remove and drain. Arrange dressed greens, pineapple, papaya, onion, and goat cheese croutons. Serve immediately
